I was wondering if there is a way for me to exchange my kdp royalties for an amazon gift card instead of Amazon having to mail me a cheque, and if this is possible how can I go about doing this? Any answers would be greatly appreciated.

Get a bank account or its equivalent; cheques are being phased out.

The reason for this policy is that Amazon (with very good reason!) is terrified of the US Internal Revenue System, which is anxious to share in your riches. You can't get a gift card in lieu of royalties, nor can you get paid with PayPal or even Amazon Payments. It's all got to be money from Amazon's bank account to your bank account, traceable and taxable. (And don't forget Social Security / Medicare taxes!)

Good luck! -- NJ
