The Kindle directions for formatting say they are for WORD 10. Are there problems using either WORD 2016 (included in Office for Mac 365 - personal subscription) or WORD 2016 (included in Office for Mac - home and student) ?

No, the directions should be fairly similar. However, rather than the KDP instructions, I recommend the Smash*words free style guide, even if you don't intend to publish with them. Among other things, it will show you how to build a manual TOC that will work on all systems.

I used Word 97 for Windows to create my book for Sm*shwords and Kindle (using the Sm*shwords style guide) with no problems at all, so you shouldn't have any problems with older versions of Word.
