Does anyone know if and how I can do this? I cannot find any information on it. I have just recently put my cookbook "Facebook Favorites Vol I" in print but because of the color images it is way too expensive. I would like to put another option for readers and have the images printed in black and white to bring the price down. I believe I can do this by having a "2nd Edition" but am not sure exactly how to go about it. Your advice would be greatly appreciated.

Go ahead, fix your pictures so they're black and white. Start over with a New Title. Be sure to call it 2nd edition, as you've said you plan to do. With either KDP-print or CreateSpace, you'll get a new (free) ISBN. Once it's published, take down the 1st edition, because it's not selling anyway. Good luck!

You need to do more than selecting B&W printing because if the illustrations in the manuscript are in colour that is how they will appear on the Look Inside. This will mislead purchasers and likely to lead to poor reviews.
They need to be converted and ideally done in a smarter way than just removing the colours. It is possible with the right graphics package to alter how different colours are rendered. For example, if there is a picture of a salad, the tomato and lettuce are obvious in colour but converted to grey scale they both could end up the same shade of grey. By making say reds darker than greens the tomato could be made to stand out better. For a cookery book I think you would want to process your images using this technique.

I have a book published as COLOR VERSION and another as BLACK and WHITE VERSION. No '2nd Edition'.
