Question around being able to download your eBook

Is it not possible to download the eBook in a .mobi format after you've uploaded your manuscript?
My manuscript is in .kpf format and it was uploaded successfully. However, when I scroll further down to the preview section all it says is "Your book cannot be downloaded"
Not sure why I'm seeing this message when I know I had the ability to download when my manuscript was a .docx

Mobi files (actually a bundle containing a KF7 file, a KF8 file, and maybe a KFX file) contains a reflowable ebook. Kindle Package Format is fixed format, a very different animal.

(Don't trust KDP to publish a print edition. Don't trust CreateSpace to publish an ebook. Each does one thing well and the other thing poorly.)

So would you recommend that I upload my eBook manuscript as a .docx instead of the .kpf?

Yes, unless it's a children's book that really benefits from being fixed format. Given a choice, always go for reflowable format. It works on far more devices and apps.

(Don't trust KDP to publish a print edition. Don't trust CreateSpace to publish an ebook. Each does one thing well and the other thing poorly.)
